Second Life: turning agroindustrial residues into value added products

Agricultural processing often generates substantial amounts of waste, posing significant disposal challenges. However, with the advent of legislation promoting sustainable waste management practices across the European Union, there’s been a shift towards reusing and recycling agroindustrial residues. This presentation explores innovative chemical and biotechnological processes aimed at extracting high-value compounds from these residues, such as phenolic antioxidants and carotenoids, found abundantly in by-products like tomato waste, artichoke remnants, bilberry waste, olive pomace, and coffee grounds. Through these processes, we not only mitigate environmental impact but also harness valuable resources for the development of functional foods with enhanced antioxidant properties, thus contributing to both environmental sustainability and consumer health.
